I always get a bit hungry around eleven in the morning. Breakfast seems ages ago but lunch is still two hours away. To prevent myself from munching on the candies on my colleague’s desk or a chocolate bar from the vending machine, I bring my own relatively healthy and very delicious date & nut bars to the office.
I always get a bit hungry around eleven in the morning. Breakfast seems ages ago but lunch is still two hours away. To prevent myself from munching on the candies on my colleague’s desk or a chocolate bar from the vending machine, I bring my own relatively healthy and very delicious date & nut bars to the office.
They are easy to make, gluten free, there’s no sugar added and you can adjust them to your own taste, with your favorite nuts and seeds.
Ingredients (for around 10 bars):
Dates (250 grams)
Dried prunes (100 grams)
All the nuts and seeds you like. This time I used pistachios, walnuts, hazelnuts, sesame seeds and flax seeds. A handful of everything.
1. Grind the (pitted) dates and prunes in a food processor.
2. Crush the nuts a little.
3. Toss all the ingredients in a big bowl and mix them with your hands.
4. Press the mixture into a small baking dish lined with wax paper.
5. Refrigerate for a couple of hours (at least six).
6. Cut into bars.
